Cheesemakers Special

This award-winning Cheesemakers Special is a wonderfully rich and uniquely nutty tasting cheese from the talented Cheesemakers at Alsop & Walker who are well known for producing the exceptional Lord London cheese. The company was founded by friends Arthur Alsop and Nick Walker in 2008 when Arthur Alsop discovered that his cheesemaking friend was giving up cheese making and returning to his home in South Africa.  Arthur, realising that the cheeses were so unique decided to take over the running of the business and carry on the good work alongside his business partner Nick Walker.  Alsop & Walker are based in East Sussex, where all the cheesemaking takes place, they also have a presence in Borough Market, London where most of their cheeses are sold. Produced using milk from four different cow breeds – Swiss Brown, Jersey, Norwegian Red and Holstein, all of the milk used comes from local dairy farms close to their home, therefore a range of milk is used dependant upon which farm has supplied the diary that particular day adding to the unique taste and quality of each cheese.  The Cheesemakers Special is a semi-hard cheese with a lovely caramel undertone and a beautiful delicate crunch from the calcium crystals formed during the minimum 10 month maturing process.  Such crystals are always normally associated with hard cheeses but as always Arthur Alsop has put his unique stamp onto this Cheesemakers Special cheese and won a silver medal in the World Cheese Awards 2023.
