Bleu D’Auvergne is a soft blue cheese from the Massif Central, France. The taste is spicy with flavours of grasses and wild flowers and a smooth blue texture. Bleu d’Auvergne is made from cow’s milk, and is one of the cheeses granted the Appellation d’Origine Contrôlée from the French government.
Discovered in the mid-1850s by a French cheesemaker named Antoine Roussel. He noted that the occurrence of blue moulds on his curd resulted in a great flavour and continued to experiment to develop this mould to produce this distinctive taste.
