Product Description

Cheshire Golden Brie or Tiresford Guernsey Gold Cheshire Brie to give it its proper name is a rich and distinctively golden Brie styled cheese made at Tiresford Farm, Tarporley by Andrew Hope and his team of cheese makers. 

Each cheese is made with the farms own milk from their award winning herd of Guernsey cattle, known worldwide for their rich and buttery milk.  Guernsey cattle are unable to break down the Beta Carotene found in grass and as such their milk is always of a richer golden hue. 

This rich Guersey milk also has a high percentage of Omega 3 and also Beta Casein A2 considered by many to be a safer and healthier milk to either  drink or make cheese with due to its easy digestion and often lower lactose content.

The Cheshire Golden Brie is made as any traditional Brie would be made. Whole milk is poured in to the vats along with vegetable rennet before being heated to 37 degrees centigrade to obtain the curd.  The cheese is then cast into small cylindrical moulds and left for up to 18 hours to allow maturation to begin. 

Once this has happened then the cheeses are  salted and aged for a minimum of 4 weeks, in which time the natural bloomy rind, caused by Penicillium Candidum, a white mould  injected  into each of the cheeses develops and is patted down by the cheesemakers on many occasions to allow the rind to develop. 

Cheshire Golden Brie is made with pasteurised cows milk and vegetarian rennet making it suitable for vegetarians to eat but as it’s a soft cheese it’s unsuitable for pregnant women.
