This fresh organic cows milk cheese with animal rennet is made by the guys at Feltham’s Farm in Somerset. They also make the award winning Renegade Monk and Rebel Nun. La Fresca Margarita is a queso fresco style fresh cheese and is pasteurised. The paste is a pure white colour, tending to yellow slightly as it ages. La Fresca Margarita has a 3-week shelf-life but it is recommended to eat as soon as possible as the cheese will firm up over time. It has a light and delicate taste that builds in flavour the longer it is kept.

La Fresca Margarita is a queso fresco style fresh cheese and is pasteurised. The paste is a pure white colour, tending to yellow slightly as it ages. La Fresca Margarita has a 3-week shelf-life but it is recommended to eat as soon as possible as the cheese will firm up over time. It has a light and delicate taste that builds in flavour the longer it is kept.

It may rival goat cheesefeta, and ricotta as one of the best cheeses to have on hand during hot summer months, when lighter, fresh cheeses make the best accompaniment to grilled food and summer vegetables. Spread over warm french style bread, or drizzle with honey and candid nuts for a sweet finish – let your imagination run free!.  

La Fresca Margarita may be eaten alone or added to other dishes. They are often used as a topping for spicy Mexican dishes such as enchiladas and empanadas, or crumbled over soups or salads. Meltable versions are used to make quesadillas. It is used to make cheesecake in some parts of the world, such as the United States.
