Product Description

This English pasteurized goat’s milk cheese is made with animal rennet at Neal’s Yard Creamery in Herefordshire by Charlie Westhead and his dedicated team of cheese makers.

Charlie Westhead is based on Dorstone Hill, overlooking the river Wye in Herefordshire. He and his team have a small-scale approach to cheese making. They have complete control over the quality of their cheeses and care passionately about what they do. This means that this love and care is reflected in all of their cheeses.

The curds for each cheese are set overnight before being ladled into log shaped moulds which, after two to three weeks of maturation, the natural mould ripened rind develops alongside the creamy texture and lemony flavour. The younger the Ragstone the more light and creamy the cheeses texture is, but as it ages it becomes firmer with peppery notes and a more distinctive and varied rind.

Ragstone is a wonderfully light and summery cheese that can be sliced into discs and added to a green leaf salad, but our favourite way of eating this cheese is with a drizzle of honey poured over it and a hunk of crusty bread … delicious !
