Seggiano Mixed Vegetable Antipasti

This delicious antipasti is made for Seggiano in Tuscany, using the traditional method of pressing fresh vegetables in to extra virgin olive oil.  That process is; the vegetables are marinated, then grilled over volcanic rock coals, before preserved in a quality extra virgin olive oil.  Enjoy as antipasti with bruschetta and Taleggio or Gorgonzola Dolcè.
