This traditional, organic, French-style Brie from Caws Cenarth has a distinctive and well-rounded mushroomy flavour which grows and develops with age. It has a creamy white interior synonymous with a classic Brie, along with a delightfully gooey centre whilst the natural cloudy like rind is the result of penicillium cadmium. Like all Bries, it goes brilliantly with fruit such as apples or grapes, which complement the cheese’s creaminess.

Caws Cenarth is a family business started by Gwynfor and Thelma Adams in 1987 in response to Milk Quotas when their farm was over producing milk with no market to purchase it. On their farm Glyneithinog, in the lovely and lush valley of the river Cych, they drew on a six-generation tradition of cheesemaking and Caws Cenarth quickly established a reputation for its creamy, fresh-flavoured Caerphilly cheese, lovingly known at Thelma.
Thelma Adams soon became a leading light in the renaissance of Welsh artisan cheesemaking. These days, Gwynfor and Thelma take a back seat, allowing son Carwyn to run the business and indulge his passion for creating new cheeses, one of which is this wonderful Brie.
