Made by Jane and Louis Grubb at Beechmount Farm, Fethard, South Tipperary and first created in 1984.
It is a celebrated Irish farmhouse cheese with a character all its own, Cashel Blue is a beautifully balanced semi-soft blue cheese, handcrafted from rich, creamy milk in the heart of County Tipperary.
Its ivory paste is delicately veined with blue-green mould, offering an elegant contrast of appearance and flavour. On the palate, it is luxuriously creamy and gently crumbly, with a mellow blue character that builds gradually rather than overpowering the senses. Expect notes of cultured cream, fresh milk, toasted nuts and subtle earthy spice, followed by a clean, lingering finish.
Unlike more assertive blues, Cashel Blue strikes an exquisite balance between richness and freshness. Its gentle saltiness and rounded complexity make it wonderfully versatile: sublime on a cheeseboard alongside ripe pears, figs, walnuts and artisan crackers, yet equally at home melted through a sauce, crumbled over a warm salad, or paired with a glass of full-bodied red wine or a naturally sweet dessert wine.
