Connage Clava Organic Brie is an award winning Scottish Brie made on the Clark family farm at Ardersier in Scotland by the Connage Highland Dairy near Inverness.

The Dairy is a traditional family-owned, fully organic business, situated on the family farm at Ardersier. The farm was started by father Hamish Clark and continues to remain within the family; a family business who also produces Connage Organic Gouda.

Product Description

Connage Clava Organic Brie is an award winning Scottish Brie made on the Clark family farm at Ardersier in Scotland by the Connage Highland Dairy near Inverness. 

The Dairy is a traditional family-owned, fully organic business, situated on the family farm at Ardersier. The farm was started by father Hamish Clark and continues to remain within the family; a family business who also produces Connage Organic Gouda.

Callum and Jill manage the cheese side of the business using their years of experience and producing a fully traceable quality end product – multi award winning cheese. Cameron and Eileen undertake the majority of the work on the farm themselves, from breeding and managing the dairy herd to milking them. 

The organic dairy herd consists of 150 cows, mostly Holstein Friesian with Jersey crosses and Norwegian Reds and they graze the luscious clover pastures around the dairy and along the shores of the Moray Firth thus producing the richest of milks used to make this award winning cheese.  

Clava is named after the prehistoric burial cairns of Balnuaran of Clava a few miles from the farm in the Scottish Highlands. Their circular ring structure is mirrored in the brie style cheese.

Clava Brie has a strong earthy taste which is quite  delicious. As it ripens, Clava becomes silky and at its best when the texture has become soft and luscious. To achieve excellent results the Clarkes  hand ladle the very delicate curd into moulds and mature carefully in a temperature controlled store before being individually hand wrapped.

This brie is a mild and engaging cheese. With hidden depths of bitterness and coolness it can be best eaten either straight from a chilled fridge or left to ripen to bring out its funky, buttery taste and unique grassy flavour.
