Marantona Cave Aged Manchego PDO is produced in the La Mancha region of Spain on the Iberian Peninsula which was also home to Don Quixote, the 17th century literary character who decided to become a Knight Errant in the book written by Miguel de Cervantes. Made with raw unpasteurised sheep’s milk, it is one of the most popular cheeses from Spain and gained its PDO status (Protected Designation of Origin) in 1984.

Product Description

The traditional use of Esparto grass moulds would leave a distinctive, characteristic zigzag pattern on the cheeses. These patterns are still formed today, as a nod to tradition when the cheese is made. Each cheese is pressed into the traditional moulds and can only be made from sheep’s milk from the Manchego breed of sheep native to this part of Spain. The cheeses are then matured for a minimum of 22 months and a maximum of 24 months in natural caves where they are turned daily to prevent too much moisture collecting on the bottom of each cheese.

Marantona Cave Aged Manchego PDO has a yellow to greenish-blackish hard rind surrounding a firm compact paste varying in colour from white to yellowish ivory. It’s slightly acidic flavour increases with maturing which combined with its buttery and rich paste makes this an outstanding Manchego cheese.

Traditionally Manchego should be served with a membrillo paste or Quince Jelly and would form part of a typical Spanish Tapas menu. This Marantona Cave Aged Manchego PDO has won a Double Gold Medal 2018 at the World Cheese Awards in and Bronze Medal at The World Cheese Awards in 2021.
