First mentioned back as early as 1792, Single Gloucester is by far the oldest of the Gloucester cheeses and probably the rarest too with its rich and decidedly unique taste. The production of Single Gloucester did die off in 1939 due to the outbreak of World War Two and the need for farms to increase their production of milk. But in 1978 it bounced back and was reintroduced by a few Gloucestershire farms.

Single Gloucester cheese is only produced by a few dairy farms where that breed of Gloucester cow is still kept. Gloucester cattle are a breed of dairy and beef cattle originating from Gloucestershire and surrounding areas in the West Country. Those farms are Smarts, Charles Martell & Sons, Godsells Cheese and Wick Court Cheese. These are the only diaries registered under the P.D.O (UK Protected to make Single Gloucester) and Smarts is by far the most traditional dairy.
Smarts Single Gloucester is made under the watchful eye of the legend that is Diana Smart. Diana has made cheese for well over 60 years and has taught her son Rod, the present cheese maker, the time honoured art of producing such a cheese traditionally. This cheese is made from full cream milk, fresh from the morning milking, and skimmed milk from the evening milking.
Smarts Single Gloucester starts with unpasteurised milk and, with a little magic, turns into an award winning full fat hard cheese. This vegetarian cheese is traditionally made as a flat circular disc with a light white/grey mould or rind. Smarts Single Gloucester cheese has a deliciously light texture and a well balanced taste that has a cool clean tang with grassy undertones.
